Tips on Grilling Steak

Whether you're an amateur in the kitchen or a seasoned veteran (pun intended), here are some battle tested grilling tips to make sure you get a perfect steak every time.

 1. Choose a great cut of meat.

 High quality angus beef or kobe beef is hard to ruin, although some amateur chefs who like all things "well done" can brutalize even the best cuts of meat.  Look for grilling steaks that are marbled - that is, that have fat layered into them.  Most of the fat in grilling steaks is actually the "heart healthy" kind that your doctor recommends you eat anyway.  Also, avoid, if possible, steaks that have tons of chemicals, synthetics, preservatives, or hormones.  Grass fed steaks are typically tastier on BBQ grills than corn fed steaks.

 2. Spice just right.

 All you need to season a delicious steak for outdoor grills are: salt, fresh cracked pepper, and some oil or butter.  Sure, some "grilling tips" mavens recommend using a multitude of spices and herbs and rubs, but if you have a great cut of meat, the succulent natural flavors will come through without all the razzle-dazzle of a bunch of spices.

 3. Turn up the heat.

 Most barbeque grills will allow you to cook steaks on a high temperature platform.  To grill rare or medium rare steaks, buy a meat thermometer at your local supermarket.  It's a cheap investment, and it can save you a lot hassle in determining when your steak is actually "done."  Also, keep in mind that your steak will continue to cook after you take it off the flame.  For well-done steaks, cook on a lower temperature to avoid charring the outside.

 A lot of how we taste food from BBQ grills comes from presentation.  Even if you've butchered the BBQ grilling process, you can still recover (somewhat) by presenting your steaks in a mouthwatering way.  Sides such as parsley, creamed spinach, mashed potatoes, corn on the cob, and grilled onions and mushrooms can rescue all but the most unfortunately grilled pieces of meat.  Low carb fans can prepare cauliflower mashed "potatoes" as an alternative to regular mashed potatoes.  Serve with a glass of fine red wine and make sure that your steak knives are sharp.  Dull knives can make steak appear too tough.
